Classic Neapolitan Layer Cake

Neapolitan Cake is a timeless celebration of three beloved flavors layered into one stunning dessert: rich chocolate, sweet strawberry, and delicate vanilla. Each cake layer is baked separately using the same reliable method, then stacked with airy chocolate mousse and luscious vanilla cream before being crowned with glossy ganache. The result is a beautiful, balanced cake that slices cleanly to reveal its signature trio of colors and flavors.

This cake is as impressive to look at as it is to eat. The chocolate layer offers depth and richness, the strawberry layer adds fruity brightness, and the vanilla layer brings smooth sweetness. When chilled and finished with ganache, the layers settle together into a cohesive, elegant dessert perfect for celebrations.

Cakes

Prepare three separate cakes: chocolate, strawberry, and vanilla. The method is the same for all.

  1. Cream the butter and sugar. Beat butter and sugar together until light and fluffy. The mixture should appear pale and airy, which helps create a tender crumb.
  2. Add the eggs. Incorporate the eggs one at a time, mixing well after each addition to maintain a smooth batter.
  3. Add dry ingredients. Mix in the dry ingredients until just combined. Avoid overmixing to preserve a soft texture.
  4. Add liquids. Add the liquid components gradually, mixing until smooth and fully incorporated.
  5. Bake. Bake at 340°F for 25–30 minutes, until the tops are set and a toothpick inserted into the center comes out clean. Allow each cake to cool completely before assembling.

Flavor adjustments: Add cocoa + hot water to the chocolate cake, strawberry puree to the strawberry cake, and vanilla to the vanilla cake batter.
