- Preheat your oven to 400°F (200°C). This high heat will help the grapes release their juices, creating a natural, sweet syrup as they roast.
- Prepare the roasted grapes:In a bowl, toss the red seedless grapes with olive oil, honey, fresh thyme leaves, and a pinch of flaky salt. The honey adds sweetness, while the thyme infuses a savory note, complementing the natural sweetness of the grapes.Spread the grapes on a baking sheet in a single layer. This ensures even roasting and allows the grapes to burst open, releasing their juices as they cook.
Roast the grapes in the preheated oven for about 20 minutes, or until the grapes burst and release their juices. The grapes will become tender and jammy as they cook.
Once done, let the roasted grapes cool slightly. You want them warm, but not too hot to touch, before layering them with the whipped ricotta.
